Denomination: Sicilia IGT Grape variety: Selection of red grapes Name: Nino Alcohol: 15° Format: 0.75L Production area: Marsala (TP), Sicily, Italy Description: The winemaking is done in a traditional manner. After careful and rigorous hand harvesting of the grapes in early September, they are immediately transferred to a drying area at 25°C for 20 days, where they lose 40% of their weight, thus enhancing their aromatic heritage. A second part of the grapes is harvested in the first decade of October with a careful and strict selection of the clusters in the vineyard, after a natural drying in the Sicilian sun. They are reunited in a single stainless steel vat where a very slow maceration and fermentation begins, lasting over a month. Only after malolactic fermentation is a gentle pressing performed. Aging takes place in French and American oak barrels, made to measure by a Sicilian master cooper, for 4 years. Then the wine is kept in bottles in a horizontal position for 12 months. Nino is the father of Stefano, Francesco, and Roberto Caruso, and in this wine are embodied all the values he received: respect for the vineyard, culture, love for his land. The color is dark red with garnet reflections. On the nose, distinct fruity scents of underbrush and ripe cherries are perceived, mixed with aromatic herbs and tertiary aromas of chocolate and tobacco. On the palate it is dry, full-bodied, slightly sweet, with soft and round tannins, and a long and persistent finish. Recommended pairing with meat-based first courses or risottos, red meats, roasts, grilled meats, braised dishes, and well-aged cheeses. Recommended temperature: 16-18° C.
