After a manual harvest in the first decade of August, fermentation in steel at a controlled temperature is followed by aging on the lees until the foam formation and, finally, bottle refermentation. A sparkling wine with a "silk" perlage, characterized by a pleasant aromatic bouquet based on citrus and brioche bread fragrances. On the palate, it is creamy, with a beautiful structure and a pronounced acidity on the finish. The color is bright light yellow. On the nose, it is delicate with interesting vegetal and floral notes, as well as fruity notes of apple, citrus, and white peach, shaded by a light toasting of bread and almonds.
