Soft pressing of the grapes and fermentation at a controlled temperature of 18-20 °C in steel. Maturation for at least 4-5 months in steel before bottling. Does not undergo malolactic fermentation. Straw yellow color with greenish reflections. Cortese is a wine from Piedmont with a fresh and fruity aroma with notes of green apple and white flowers. The taste is fresh and delicate with a pleasantly dry finish. Its good drinkability makes it very versatile in pairings such as appetizers, fish, risottos, and white meats. Ideal as an aperitif.
