Soft pressing of the grapes, fermentation in steel tanks and in small oak barrels at controlled temperature. After fermentation, the wine is kept in contact with the yeasts through a batonage operation and then refermentation in the bottle. The aging is at least 36 months on the yeasts. The color is lunar straw yellow, with a very fine, persistent and continuous perlage. On the nose, a perfect bouquet of elegant and fresh yeast aromas, it impresses with its fragrance and fullness, combining a fruity vein with hints of vanilla and brioche. On the palate, it expresses a caressing effervescence, a nice acidic vein that supports an intense and soft fruitiness, with tropical notes of ripe exotic fruit; in the finish, it appears long, satisfying, and persistent. Recommended pairing: mixed appetizers, especially fish, fish first courses, sushi and sashimi, fish fry or fish tartare. Recommended temperature: 8-10° C
