On the palate, the power and elegance of silk come together in a fascinating play, finishing with a long and slightly bitter aftertaste. Fermentation and maceration on the skins for 30 days in a 25hl open wooden vat and in 20hl open steel vats with manual punch-downs 1-2 times a day. Indigenous yeasts. After pressing, spontaneous malolactic fermentation (in spring) and aging in large Slavonian oak barrels of 20hl-28hl for three or four years, followed by one year of bottle aging.
