The fermentation and maceration take place in concrete and steel tanks for about 18/20 days. Aging in French oak barrels and casks, for a varying time, depending on the wine's characteristics, from 16 to 20 months. After bottling, there follows aging in glass for about 6 months. The color is intense red. On the nose, there are notes of ripe fruit, berry jam, notes of graphite, withered violet, very complex. On the palate, it is full-bodied and very consistent, with notes that range from vanilla to pepper, well balanced. Recommended pairing with pasta with meat sauce or risottos, red meats, roasts, game, stews, and well-aged cheeses. Recommended temperature: 16-18° C. This bottle comes from private collections, restaurants, wine shops, or rare wine merchants.
