Maturation is carried out through an initial passage in stainless steel containers for about 5/6 months, followed by a passage in barriques for another 3 months. Aging is then done in the bottle for about 5/6 months. The color is ruby red with clear amaranth reflections. On the nose, fruity, floral, vegetal, and spicy notes are perceived, with hints of berries, tamarind, black pepper, cloves, leather, coffee, and licorice. On the palate, it is dry, warm, soft, moderately fresh and moderately tannic, balanced, intense, persistent, and harmonious, with the same aromas found on the nose. Recommended pairing with appetizers based on cured meats and aged cheeses, first courses based on meat, grilled meats, roasts, and game. Serving temperature: 16-18° C.
