Maturation is done with an initial stage in stainless steel containers for about 5/6 months, followed by a passage in barriques for another 3 months. The wine is then refined in the bottle for about 5/6 months. The color is ruby red with clear carmine reflections. On the nose, fruity, floral, vegetal, and spicy notes are perceived, with hints of cherries and berries, wilted violet flowers, pine and balsamic whiffs, notes of licorice, pine, and rhubarb. On the palate, it is dry, warm, moderately fresh and tannic, balanced, intense, persistent, and harmonious, with the same aromas perceived on the nose. A wine capable of demonstrating all the strength, character, and territoriality of the island. Recommended pairing with grilled meats, sliced meats, oven-baked lamb with herbs, game, and aged cheeses. Serving temperature: 16-18° C
