Description: The vinification is done in a traditional manner, fermentation of about 4 weeks partly in ceramic, partly in wooden vats, and partly in steel. Malolactic fermentation is not carried out. The wine matures for a total of 10 months in the same containers and remains in contact with the fine lees until the following summer. The color is intense yellow with greenish reflections. On the nose, fruity scents reminiscent of pear, peach, and floral notes such as acacia and hawthorn flowers; there is also a characteristic hint of honey. On the palate, it is dry, warm, and soft, very balanced, with no rough edges, and in the finish, a good acidity is perceived, giving length, persistence, and savoriness to the palate. Recommended pairing with mixed appetizers, especially fish, fish first courses, fish and shellfish, fried fish or fish tartare, cod and potato salad. Recommended temperature: 10-12° C
