The second fermentation occurs in September of the year following the harvest. The aging on the lees may last at least 48 months. Riddling is done manually on pupitres, performing 21 positions. The duration of the riddling is about 40 days. Wine of pale straw yellow color; the perlage is fine and persistent; the bouquet is intense with slight hints of bread crust, honey, and white flowers. On the palate, the wine is savory, with a good and fresh acidity, enveloping and very persistent. Excellent as an aperitif, recommended with appetizers and first courses, or to accompany grilled fish and shellfish, it expresses all its character with baked fish.
