Grape harvest: Manual Winemaking: Fermented in steel at controlled temperature (14°C), the alcoholic fermentation lasts 20 days, followed by two racking and three months of aging in tank. Refermentation: The second fermentation occurs in autoclave for about two months achieving the sparkling effect. Alcohol: Alcohol 11.50% vol. Variable with the vintage. Organoleptic notes: Fine and intense perlage, definite and creamy foam. Straw yellow color, the aroma recalls floral notes of acacia with refined hints of citrus and green apple, with delicate nuances of yeast that enrich and make this wine special. On the palate, a fresh and dry style, thanks to its minerality and sapidity, offers great pleasure to the tasting.
