
VARIETY: SOIL: TRAINING METHOD: PLANT DENSITY: GUERRINO FRANCO SILTY - CLAYEY SYLVOZ 3300 VINES/ha Guerrino is made entirely from Refosco grapes and presents itself in this evolved version with a deep, impenetrable ruby red color. The aromas are broad and evoke wild berries, plum jam, maraschino cherries, and extend with slightly toasted and balsamic notes. On the palate, its fullness and length arrive with a well-integrated tannin that provides softness and encourages drinking. Vinification Description: Hand harvesting of grapes, destemming, maceration, and fermentation for 10-12 days, during which multiple daily pump-overs and délestage are performed. The wine rests for a few months in steel during the winter and then matures in barriques (225L) and tonneau (500L) of second passage for about 14-15 months. 60% of the mass matures in barriques with light to medium toasting and the remaining 40% matures in tonneau with medium toasting. The wine is then blended again in the same steel tank where it rests for two months before being bottled. Pairings: Guerrino pairs well with aged cheeses, grilled meat, and game, but it is also recommended to try it with dark chocolate, which will enhance the toasted notes from aging in fine oak barrels.
