Against The Grain. The brewers at Wold Top like to define this beer as "Lager style Pale Ale" and in an instant all our certainties begin to tremble: how can a beer be both Lager and Ale? The mystery is soon revealed: in England, Pilsner malt is sometimes called "Lager malt" and this is what that strange term refers to. It is actually an excellent top fermentation in pure English style, except for the mix of cereals used: in addition to the "Lager malt", which is lighter in color and less biscuity on the nose and palate compared to classic English Pale malts, there is also a small percentage of corn, which further helps to reduce the presence of gluten.
