
From the collaboration between the renowned Brasserie Cantillon and Cantina Giardino, several Druiven Lambic are born, that is, spontaneously fermented beers that in their production process encounter grapes. In the same glass of Belgium and Italy, beer and wine. In this case, Sophia Lambic is a blend of pomace from Greco di Tufo with a two-year-old Lambic: the maceration takes place in amphora and lasts about six months. Strongly wine-like nose, which with closed eyes can even make one think they have a structured red wine in the glass. With a bit of warmth and oxygen, it especially opens up in the mouth, with citrus and fruity notes and a wild profile that is fairly controlled.
