
On a vineyard surface of 7.32 hectares, located entirely in the village of Oger, grapes are grown exclusively for the production of Champagne Grand Cru: 100% Chardonnay Oger mono-cru, 100% mono-varietal. The soil is dominated by chalk, one of the main elements to maximize and enhance the quality of Chardonnay. They are set to obtain HVE (High Environmental Value) certification by the end of 2022, with harvests carried out strictly by hand. The grapes are pressed using a traditional Cocquard press made of oak. Most cuvées are disgorged using the traditional method "à la Volée". In the cellar: the manual harvest of the 2016 vintage comes from vines with an average age of over 50 years. After vinification and aging in stainless steel, malolactic fermentation is completed and the wine remains on the lees for at least 60 months. Characteristics: straw yellow in color, with elegant and delicate effervescence. The nose reveals notes of almonds and candied white fruit, with a slight hint of brioche. On the palate, it is firm, persistent, complex, with aromas of dried fruit and honey. A powerful vintage blanc de blanc to be enjoyed by true enthusiasts. Pairings: perfect with seafood dishes.
