
Cultivation: Champagne Viellard-Millot is a family business, in its 6th generation, with its vineyards near the village of Ambonnay. The properties extend for 2.23 ha, composed of 9 plots, cared for with rational viticulture logic and without the use of insecticides. Vinification and sparkling wine production are done at the Centre Vinicole d’Ambonnay and all the cuvées produced are marked with the designation Grand Cru, reserving extraordinary quality thanks to patience and respect for tradition. Vintage 2012: despite a difficult year (frost, rain, hail, water stress), it benefited from a nice hot and dry summer that allowed for good ripening. The low yield and quality of the harvested grapes gave this vintage an intense character. In the cellar: manual harvest, fermentation in stainless steel with temperature control, use of selected yeasts; malolactic conversion completed and aging on the lees for at least 7 years before disgorging. Characteristics: golden yellow in color with yellow-green reflections and fine, lively bubbles on the nose immediately evoke aromas of peach, candied lemon, acacia honey, leaving then space for notes of plum, apple, candied pear, and cherry with iodized nuances. On the palate, it is fresh, fruity, tasty, and creamy, with a nice citrus acidity and great iodized minerality persistence. Pairings: excellent with seafood preparations, from grilled fish to fish soup and to be tried with a nice risotto with green asparagus.
