The Diletta beer from the Birrificio Magis is a very good Kolsch, soft, slightly sweet, fruity and well balanced. Diletta beer is an unfiltered, unpasteurized craft beer with high fermentation, golden in color, fresh on the palate and well balanced thanks to its delicate character which presents pleasant fruity and hoppy notes. KOLSCH BEER: THE GERMAN HIGH FERMENTATION The first traces of what would be called kolsch date back to 874 AD and by 1250 there was already a brewing office in Cologne that controlled its production. Considering that the German production landscape is mostly low fermentation, we are faced with a kind of production rarity. These are the characteristics that distinguish this type of beer: white foam with moderate persistence, golden and clear color, malty aroma with hints of honey and hops, well attenuated and dry taste, medium to medium-low body, carbonation (the bubbles, what for wines is referred to as 'perlage') well present.
