Diletta beer from Birrificio Magis is a very good Kolsch, soft, sweetish, fruity, and well balanced. Diletta beer is an unfiltered, unpasteurized craft beer with top fermentation, golden in color, fresh on the palate, and well balanced thanks to its delicate character that presents pleasant fruity and hop notes. KOLSCH BEER: THE GERMAN TOP-FERMENTED BEER The first traces of what would be called Kolsch date back to 874 AD, and by 1250 there was already a brewing office in Cologne controlling its production. Considering that the German brewing scene is mostly bottom-fermented, this represents a sort of production rarity. These are the characteristics that distinguish this type of beer: white foam with good persistence, golden and clear color, malted aroma with hints of honey and hops, well attenuated and dry taste, medium to medium-low body, and well-present carbonation (the bubbles, known as "perlage" in wines).
