The cake called “Spongata” is an ancient baked good typical of the Reggio Emilia area, where it has its epicenter in Brescello, in the province of Parma. It is a very old product whose origins are not entirely clear, but traces of a similar sweet to the current one can be found as early as medieval times. Currently, that produced by our Company is presented as a round-shaped cake formed by a layer of shortcrust pastry, sprinkled with a layer of white icing sugar, inside which is enclosed a sweet-tasting filling with a slightly spicy aftertaste and a soft texture. The story of Don Camillo Spongata The town of Brescello is famous not only for the fortunate saga of Guareschi (Don Camillo and Peppone), but also for a delicious sweet: the Spongata cake that our company wanted to name after this well-known and beloved character. It is a very rich baked good, with a shortcrust pastry shell that contains a special brownish filling made from almonds, candied orange peel, sultana raisins, honey, butter, apricot jam, spices, and flavors. The historical origin Its origin is very ancient, as with many sweets produced in our beautiful Italy, more or less with the same ingredients. It appears to date back to the mid-1400s, although it only became typical of the Emilian gastronomic tradition from the second half of the 19th century. Production began in 1863 with the Bacchi family and continues today as in the past, still made by hand.
