Sour Cherry Wine is one of the typical products of the Marche region, particularly from Montefeltro. The product, already mentioned by the biographer of Duke Federico II of Montefeltro, is obtained from the fermentation of sour cherries with sugar. Sour cherries are a very ancient variety of wild cherry, characterized by an intense flavor, not too sweet, with an intriguing almond-like aftertaste that creates a pleasant fresh and tangy sensation. The ingredients are placed in closed containers for fermentation at a controlled temperature, and then, subsequently, wine from the previous year is added. The resulting mixture is left to rest for at least four years before bottling. This is how the inimitable Sour Cherry Wine of Podere Casella Muzighin is born! The resulting sour cherry wine is clear, consistent, with a deep ruby red color, and a very intense aroma of sour cherry in spirit. Mineral hints of graphite, chocolate, and dog rose can also be recognized. On tasting, it is sweet, warm, soft, with great freshness and good tannicity. Finally, a pleasant note of Amaretto di Saronno is perceived in the finish. The name could only recall the inspirer and the one who has always produced sour cherry wine for the family, Serafino Pizzoni. With the addition of the initial article "Il Serafino," it becomes a name that alone evokes the sensations experienced when tasting the product: sensations of warm serenity and pleasantness.
