Lardo d'Arnad DOP, as the name suggests, originates from Arnad, a small town in the Aosta Valley. Being a DOP product (protected designation of origin), it follows strict guidelines starting from the raw material: pork shoulder of at least 160 kg and not less than 9 months old. In addition to pork lard, the recipe includes the addition of salt, pepper, and aromas. It is precisely the aromas - some typical of the alpine areas like mountain herbs and yarrow - that give it that distinctive flavor! The preparation of Lardo d'Arnad is completely natural and in many processes still manual. Preservation takes place from the beginning in "doils," chestnut wood forms, with particular joints that do not allow the brine to escape. Nowadays, glass containers are preferred. A minimum resting time of one year is required, after which it is packaged. The meat appears pinkish and spotless. The surface is particularly clear, while inside it shows shades of pink.
