Very easy to prepare, just immerse the aluminum pouch in which it is contained in a deep pot of water, bring to a boil, and cook for about 1 hour. According to tradition, the salama da sugo is consumed by reducing its pulp into small crumbs, placed on a soft mashed potato or pumpkin puree, rather than on a soft polenta sprinkled with its tasty and fragrant sauce.
