Vialone Nano Rice with Pestles
The production of rice in the Venetian plains is ancient and linked to the abundant presence of clear waters from natural springs and ditches that feed old mills with wooden grinders. This is where the production of Vialone Nano Rice begins. It is a semi-fine rice increasingly considered the progenitor of risotto rice. The grain has three starch cores that make it ideally suited for producing so-called 'all'onda' risottos and creamy dishes. The grain is medium-sized, round, and semi-long, with a pronounced tooth, a stubby head, and a rounded section. It should appear white, free of streaks, and feature an extended central 'pearl.'
