The wild boar ragù is a typical condiment of the culinary tradition of the Maremma Grossetana. The Il Poggio farm wanted to evoke the traditional tastes of Tuscany, indeed, it brings strong and decisive notes with a slight gamey aftertaste. This tasty sauce is prepared with a base of finely chopped fresh vegetables (onion, celery, carrot, etc...). Once the vegetables are wilted, the meat is added for the first cooking. The meats are very fine and during cooking, wine, sun-dried tomatoes from the Il Poggio farm's garden, and other ingredients are added. The cooking time is very long but it is necessary to ensure the best guarantee for a strong and balanced flavor.
