During the withering, an additional 20 minutes of shaking of the fresh leaves was added to promote the gentle passage of the water contained in the stem towards the leaves. Moreover, the temperature of the crushing enzyme is lowered by 10%, as usual, to about 220 °C. After a further light shaking for another 20 minutes, the leaves are finally cooked at 90 °C for 30 minutes. Watching the fresh leaves move during these phases is already part of the experience.
