Tasting - Sight and Smell: The organic red tea Yunnan Old Bush has very elongated and thin whole leaves, rolled in shape. The color is a shiny anthracite gray with many golden buds. On the nose, the infused leaves release aromas of malt, wood (with a slightly smoky note), sweet fruits like dates and sultana raisins, and a floral finish with notes of rose. The liquor presents a dark orange color with bright amber reflections. Tasting Notes GONG FU CHA: The first infusion of the organic red tea Yunnan Old Bush brings fruity notes with it: on the palate, flavors of red fruit in compote, cooked winter fruits (apples), and baked plums are perceived. A note of dry wood also emerges along with an interesting peppery note, anticipating a floral finish. The second infusion presents an opening with a very intense spicy note, reminiscent of a mix of black and white pepper. Then come malt, baked apple, and a slight perfumed note that accompanies the woody aromas. Brewing Time for Organic Red (Black) Tea Yunnan Old Bush: We strongly recommend infusing the Yunnan Old Bush tea using the traditional Chinese method (gong fu cha) to best enjoy these leaves. Following this preparation, you can use 7 grams of leaves (about 3 teaspoons) in a gaiwan of about 180 ml to obtain multiple infusions with different flavors. After a quick rinse of the leaves in water at 95°C, you can proceed to a first infusion of 10 seconds and then, keeping the water at the same temperature, you can proceed by increasing the time by 10 seconds each time compared to the previous infusion (10 - 20 - 30…). This tea has a longevity of about 7 infusions. For a classic preparation according to Western style, we recommend 3 grams of leaves (about 2 teaspoons) in a 150 ml cup with water at 95°C for an infusion time of one and a half minutes.
