

FERMENTUM Winter is a naturally sparkling non-alcoholic fermented beverage, obtained from the fermentation of juices and infusions of wild herbs. It arises from the meeting between Giulio Officinalis, a herb collector who has been experimenting among woods, pots, and stills, transforming wild plants into artisanal preparations, and TIBI, which works with fermentation to bring this botanical imagery into a gastronomic drink. A dialogue between gathering, extraction, and fermentation takes shape in FERMENTUM. The result is a complex and botanical NoAlcohol proposal, designed for pairing at the table, between dinners and aperitifs.
