In the past, coffee was a luxury, so people made do with more affordable and easy-to-find alternatives like barley, chicory, figs, pears, malt, rye, and even lupines. The native variety of lupine "Caffè di Anterivo," a SlowFood presidium, is a unique blend of lupine, barley, and wheat, particularly special because it contains no caffeine. In the heart of the Monte Corno Natural Park, Anterivo (Altrei in the local language) is the ideal place for cultivating these legumes, a practice that began at the end of the 1800s. The individual ingredients are roasted separately, as the barley, wheat, and lupine from Anterivo require different roasting times. Both the lupine and barley used to make the coffee are grown in Anterivo (Bz), in fields located at 1200 meters above sea level. Rediscover the comforting and flavorful taste of this traditional caffeine-free coffee alternative to prepare at home. You can enjoy it as an infusion, using half a liter of hot water for 55g (about 18 heaping teaspoons). Let it infuse for about 8 minutes. This will yield approximately 8 cups. You can always adjust the quantity according to your preferred taste. If you use a moka pot, use the ratio of 200 ml of water to 16g (about 5 heaping teaspoons) to make about 3 cups. In the moka pot, it is preferable to fill the funnel only halfway, as the powder expands. Glass jar of 125g.
