It is an ancient and precious variety of black color, very small in size, cultivated exclusively in open fields by local farmers in the Alta Tuscia Viterbese area. Rich in proteins, starch, mineral salts, crude fibers, and iron with powerful antioxidant properties. They do not require soaking. I recommend cleaning the legumes by rinsing them several times under running water, placing them in cold water, and cooking for a maximum of 15 minutes.
