For the gnocchi: Combine the flours, boiling water, and salt to create a dough. Divide the dough, create strips, and cut your gnocchi. Drop them into salted boiling water and let them cook for 20 minutes. In the meantime, prepare the sauce.
Clean the mushrooms (we will use only the caps), sauté garlic and oil, add the Shiitake with a splash of water and let them cook for a maximum of 10 minutes! Halfway through cooking, you can add the chopped parsley.
Pour the gnocchi directly into the sauce, sauté them for a couple of minutes over high heat with soy sauce. Plate, sprinkle with sesame seeds, and enjoy.
