Soak and squeeze the crumb of the stale bread. In a bowl, combine all the ingredients and work with your hands until you get a homogeneous mixture.
Shape the meatloaf and wrap it in parchment paper like a candy and leave it in the fridge for an hour (it will settle and won't break during cooking).
Preheat the air fryer (5 minutes) and cook the meatloaf for 30 minutes at 180 degrees. Before starting the cooking, brush the surface with extra virgin olive oil.
