An emblematic recipe from the island of Réunion
Cut the octopus into pieces of 2-3 cm.
Chop or crush all the spices.
In a bowl, mix the octopus pieces, chopped onion, green onions, halved cherry tomatoes, thyme, grated ginger, chopped spices and drizzle with oil.
Pour the contents of the bowl into a saucepan and cook over low heat with the lid on until the water released by the octopus has evaporated.
Once the preparation is dry (from 20 to 40 minutes), add the red wine.
Cook covered until the sauce is thick and almost dry (about 15 minutes). Stir regularly. Adjust salt if necessary.
Allspice is an aromatic spice obtained from the sun-dried fruit of Pimenta officinalis. Its aroma is reminiscent of cinnamon, clove, pepper, and nutmeg. It is also called true allspice, Jamaican pepper, clove pepper, or Jamaica pepper.
