Mix the sifted flours in the stand mixer, add the yeast dissolved in a little water taken from the total, then add the rest of the water gradually.
When the dough has thickened, add the salt little by little, incorporate well, then add the oil gradually and knead the dough until it is smooth and elastic.
Transfer to a container to rise for about 2 hours, making 3 rounds of folds in the bowl at 20-minute intervals.
Take the dough again, divide it into pieces of about 160 g, form balls and let them rise until doubled.
Then roll out each ball into a disc, fill with the seasoned tomato sauce and bake at 250°C for about 8 minutes, then add the mozzarella and bake for another 5 minutes.
