To start, prepare all the ingredients. If using dried shiitake mushrooms, place them in a bowl and cover with warm water. Let them sit for about 20 minutes until they are tender. Then chop them into pieces.
In another bowl, mix the cornstarch and water. Add the remaining sauce ingredients, mix, and set aside.
Heat the sesame oil in a wok or pan. Add the onion and cook for 2 minutes. Add the garlic and ginger and cook for one minute.
Add the minced pork and stir to break it up. Cook until it turns white.
Add all the vegetables, except the bean sprouts. Cook for 2 minutes or until the carrot has softened and the pork is cooked.
Now add the sauce mixture and the bean sprouts, then stir to combine.
Cook for 2 minutes or until the sprouts have wilted and the sauce has thickened.
To serve, place the filling on a lettuce leaf. Top with chili and spring onion if you like.
