Sauté the peas in a pan with extra virgin olive oil and chopped onion for a few minutes
Combine the cooked peas and onion in a mixer with oat flakes, 2 tablespoons of oil, breadcrumbs, and plant-based milk. Start blending and adjust with salt and pepper until you get a soft but not sticky mixture
Cut the vegan melting cheese into small pieces. With the pea mixture, form balls of 25 g each, insert a piece of plant-based cheese into each one, and close the meatball well. Finally, roll it in breadcrumbs
Cook the meatballs in a pan with extra virgin olive oil until well browned on all sides. You can also bake them in the oven at 200°C for 30 minutes, turning them halfway through cooking
