Preparation

Peel and grate the carrots using the large holes.

In a bowl, mix the carrots with the egg, thyme, pepper, and mozzarella.

Prepare a baking tray with parchment paper and form discs with the mixture.

Flatten well and sprinkle with Parmesan to make them crispier during cooking.

Bake in a preheated oven at 180 degrees for about 20 minutes, checking the cooking.

Once cooked, let them cool slightly and fold before they cool completely.

Fill as desired with baby spinach, Jocca cheese, and slices of roasted ham.
