For the béchamel, pour 200g of blueberry drink into a small pot. Add about 1 tablespoon of sifted flour, a drizzle of extra virgin olive oil, and a pinch of coarse salt. Stir and bring to the heat.
Thicken the sauce, stirring constantly. It will take a few minutes
Cool the béchamel in a glass, covering it with cling film in contact.
Serve the warm balls with the blueberry béchamel
