

Simple and quick orange cake proposed on Instagram: a moist cake flavored with orange, suitable for a snack. The author also suggests cooking in an air fryer as an alternative to the oven.
Preheat the oven to 170°C (alternatively set the air fryer to 170°C for the first phase).
Thoroughly wash the organic orange and, if indicated in the original preparation, grate the zest and squeeze the juice (here the whole orange is used: adjust as per preference).
In a bowl, beat the eggs with the sugar (or erythritol) until a frothy mixture is obtained.
Add the honey and extra virgin olive oil, mixing well.
Sift together the flour and potato starch with the baking powder and incorporate into the mixture until a homogeneous dough is obtained.
Add the orange (pulp and/or juice and zest) to the dough and mix well to distribute.
Pour the mixture into a prepared cake pan lined with baking paper or buttered and floured.
Bake in a ventilated oven at 170°C for about 40 minutes, checking the cooking with a toothpick.
Alternative air fryer: cook at 170°C for 15 minutes, then lower to 160°C and cook for another 15 minutes; check with a toothpick.
Let cool before unmolding and serving.
