Tricolor pea pasta: a vegan first course, hearty and nutritious, suitable for both lunch and dinner. Easy and quick to prepare, with few ingredients: pea pasta, tomatoes, tofu, and basil.
Cut the tofu into cubes and blanch it for a few minutes; drain it and set it aside.
Wash the tomatoes and cut them into pieces.
Cook the pasta according to the indicated cooking times, drain it well and rinse it under cold water.
In a bowl, combine the cooled pasta, the blanched tofu, and the tomatoes.
Dress with extra virgin olive oil and chopped fresh basil.
Mix everything well and serve immediately.
