Tricolor couscous with Feta IGP, tomatoes and zucchini: an inexpensive, simple and summery one-dish meal without butter and without eggs. An easy and quick recipe, also to prepare the evening before for lunch at the office or at the beach the following day.
Wash the zucchini, trim the ends, cut into chunks and boil them until al dente.
Also cook the couscous (you can use the cooking water from the vegetables) and wait for it to cool slightly.
Combine the couscous with the zucchini and the Feta IGP cut into cubes.
Dress everything with extra virgin olive oil, pepper and torn basil, mixing well before serving.
