Wholegrain quinoa with edamame and hard-boiled eggs: a gluten-free one-dish meal, nutritious and substantial, without butter or cheese. Can be prepared in advance and eaten cold.
Wash the quinoa and cook it following the package instructions.
Wash the edamame and blanch them for a few minutes until tender.
Boil the eggs, then let them cool, peel them and slice them.
When all the ingredients are cooked, combine them in a bowl.
Dress with the extra virgin olive oil, chopped arugula and oregano.
Serve immediately or let cool and store in the refrigerator: the recipe is suitable to be eaten cold as well.
