Quickly mix all the ingredients (except for the parsley), adding the salt last. Let it rest for about 30 minutes covered with plastic wrap.
Knead well and form a dough ball. Let it rest for about 2 hours covered with plastic wrap.
Divide into six equal parts, roll them out, fill with parsley (you can also use basil, garlic, chili...), roll up and shape into a large tarallo. Place on the oven tray and let rest for about 30 minutes.
Bake in a static oven at 190 degrees for 25 minutes.
