Mix the 00 flour, rice flour, and all the water.
Once all the flours are absorbed, knead quickly, cover with plastic wrap, and set aside.
Cook the vegetables in a pan for about 5-7 minutes; they should remain crunchy (steam the broccoli beforehand).
Add the mixture of soy sauce, ginger, garlic, and sesame seeds to the vegetables and mix everything.
Take the dough, form a roll, and cut into small pieces.
Gently press with your finger, flattening them so they take the classic shape.
Cook in salted boiling water for 6-7 minutes (depending on thickness).
Drain directly into the pan and mix.
