Crispy potato balls on the outside and gooey on the inside, easy to prepare and delicious. Perfect as a side dish or snack.
Cook the potatoes in water until they are soft.
Mash the potatoes in a bowl and add the potato starch, grated Parmesan, and salt.
Mix until you get a smooth and homogeneous mixture.
Take a spoonful of the mixture, place a cube of provola in the center, and close it to form a ball.
Repeat the process for the other balls.
Dip the balls in beaten eggs and then in crushed cornflakes (or breadcrumbs).
Add a spray of oil.
Cook in an air fryer at 200°C for 10 minutes or in a hot oven for 18-20 minutes.
