Dry the mozzarella balls very well with kitchen paper towels until they are practically dry.
Coat the mozzarella balls first in flour, then in egg, and finally in breadcrumbs with a pinch of salt, shaking the bowl.
Repeat the process for a double coating, passing the mozzarella balls again in egg and breadcrumbs.
Place the mozzarella balls in the freezer for at least 45 minutes or even better for a few hours.
Cook the mozzarella balls in an air fryer with a spray of oil at 200 degrees for about 7 minutes, turning them halfway through cooking. Alternatively, bake them in the oven at 220 degrees for 10-15 minutes or until golden, or fry them in plenty of seed oil.
