Dry the mozzarelline very well with kitchen paper until they are practically dry.
Coat the mozzarelline first in the flour, then in the egg, and finally in the breadcrumbs with a pinch of salt, shaking the bowl.
Repeat the process for a double coating, passing the mozzarelline again in the egg and breadcrumbs.
Place the mozzarelline in the freezer for at least 45 minutes or better yet for a few hours.
Cook the mozzarelline in the air fryer with a spray of oil at 200 degrees Celsius for about 7 minutes, turning them halfway through cooking. Alternatively, bake them in the oven at 220 degrees Celsius for 10-15 minutes or until golden, or fry them in plenty of seed oil.
