Preheat the oven to 180°C.
Cut the filo pastry sheets into strips.
Place a slice of speck and a piece of scamorza on each strip.
Roll the strips to form roses.
Arrange the roses on a baking tray lined with parchment paper.
Bake in the oven for about 15 minutes or until golden.
