Cook the rice or use leftover cooked rice.
Add two eggs, a drizzle of oil, salt, pepper, and Parmesan to the rice and mix everything together.
If the mixture is not compact, add enough Parmesan and/or breadcrumbs.
With slightly oiled hands, form a ball, stuff it with ham and cheese, and carefully close it, shaping it into a croquette.
Quickly roll the croquettes in breadcrumbs.
Cook them directly in a pan with a drizzle of oil until they are golden on both sides.
