

Cook the potatoes in water until soft.
Mash the potatoes in a bowl and add the starch, grated parmesan, and salt.
Mix until you obtain a smooth and homogeneous mixture.
Take a spoonful of the mixture, place a cube of provola in the center, and close it to form a sphere.
Repeat the process for the other spheres.
Dip the spheres in beaten eggs and then in crushed cornflakes (or breadcrumbs).
Add a splash of oil.
Cook in an air fryer at 200°C for 10 minutes or in a preheated oven for 18-20 minutes.
