Cook the rice or use leftover cooked rice.
Mix two eggs, a drizzle of oil, salt, pepper, and Parmesan cheese with the rice and combine everything well.
If the mixture is not compact, add enough Parmesan and/or breadcrumbs.
With slightly oiled hands, form a ball, fill it with ham and cheese inside, and close it carefully giving it the shape of a croquette.
Quickly pass the croquettes in breadcrumbs.
Cook them directly in a pan with a drizzle of oil until golden brown on both sides.
