Prepare the espresso coffee and let it cool.
Separate the egg yolks from the egg whites. Beat the egg yolks with the sugar until you get a light and fluffy mixture, then incorporate the mascarpone until you have a smooth cream.
Whip the egg whites until stiff and gently fold them into the mascarpone mixture, mixing from the bottom up.

Let it rest in the refrigerator for at least 3-4 hours before serving.
