

Tiramisu is the most beloved Italian dessert in the world: soft, creamy, and fragrant with coffee, it brings to the table all the sweetness of grandmother's recipes. A perfect combination of ladyfingers, mascarpone cream, and intense coffee, it wins over every spoonful.
Prepare the espresso coffee and let it cool.
Separate the egg yolks from the whites. Whisk the yolks with the sugar until you obtain a light and foamy mixture, then fold in the mascarpone until you get a smooth cream.
Whip the egg whites until stiff and gently fold them into the mascarpone mixture, mixing from the bottom up.
Quickly dip the ladyfingers in the cold coffee (not too long, otherwise they will become too soft) and lay them on the bottom of a baking dish.
Cover the ladyfingers with a layer of mascarpone cream.
Alternate a second layer of soaked ladyfingers and cream, until all ingredients are used up.
Sprinkle the surface with unsweetened cocoa powder.
Let it rest in the refrigerator for at least 3-4 hours before serving.
