Preparation

Wash and cut the cherry tomatoes in half, place them in a pan with a drizzle of extra virgin olive oil and a pinch of salt, and sauté for about 5 minutes.

Add the granulated shiitake, mix well, and sauté for 3 minutes over high heat.

Meanwhile, take the rye bread and lightly toast it in a hot non-stick pan or with a toaster.

Once the bread is removed from the pan, cook the egg sunny side up or to your liking.

Prepare the avocado cream: cut the avocado in half, remove the pit, and using a spoon, scoop out the flesh and place it in a bowl.

Add a drizzle of oil, salt, and the juice of half a lime, and mix well.
